I made this slaw recipe a few weeks ago to use up the produce that was left in the fridge. We were making elk steak and just needed some veggies to go with it. The bulk of this side dish was simply a bag of slaw. A few people asked for the recipe, so I did my best to recreate the original and paid attention to the measurements. This is really quick and easy & goes nicely with a pork chop, chicken or a steak.
The #1 thing I continue to hear from my blog followers over and over is how to make Paleo fast, budget-friendly & easy. My rural followers have a hard time accessing different ingredients & don’t always have as many produce choices as the city dwellers do. What could be easier than sauteing a bag of slaw with some pantry staples?

Hot Apple Ginger Slaw and Greens
- 1 bag of cole slaw mix
- 2 handfuls of greens
- 3 Tbsp of coconut oil or lard (divided)
- 2 apples
- 1 tsp cinnamon
- 1 tsp ground ginger
- 2 tsp crushed garlic
- 2 Tbsp apple cider vinegar
- 1 tsp salt
- pepper to taste
Directions:
- Saute apples in 1 Tbsp of oil or lard till cooked most of the way through.
- Add bag of slaw, greens and rest of oil or lard.
- Add cinnamon, ginger, garlic, vinegar, salt and pepper and mix well while you saute the mixture til slaw and greens wilt.
- Taste and adjust seasonings as necessary.
Variations:
- Make this recipe your own! Adjust the seasonings as you wish.
- Substitute fresh garlic and ginger as you wish.
- I used ACV the first time & White Balsamic Ginger Infused vinegar the second. Both were great!
- Add bacon or ground pork and make it a one dish meal.
- I love Penzey’s spices. They carry many types of cinnamon. Spice up your pantry by trying a new one!
